What's an Ossobaw pig you ask? They are a special breed descendant from the famous Iberian pigs in Spain found on Ossobaw Island, Georgia. Their story is well chronicled with humor and gusto in the book Pig Perfect by Peter Kamisky. How long does it take to work a book into your reading list? Il Buco restaurant Hosts its Fourth Annual Outdoor Pig Festival on Bond Street
il Buco restaurant will celebrate its 13th anniversary while hosting its fourth annual "Sagra del Maiale", an outdoor Pig Festival commemorating the Autumn Equinox (when day and night are of equal length). It will take place outside il Buco on Bond Street between Lafayette and Bowery Thursday, September 20, 2007 from 1:00 - 6:00pm.
il Buco will roast a 160 lb Ossabaw Pig "infernillo style" (literally "little hell") where the pig is slowly roasted between two large iron griddles with an intense wood fire above and below. This method ensures moist, succulent pork.

Executive Chef Ignacio Mattos is a protege of the famed South American Chef, Francis Mallman. Ignacio is only 27 years old and started cooking with Chef Mallman at age 18. He has worked with Alice Waters at Chez Panisse and with Judy Rodgers at Zuni Cafe, and is currently the Executive Chef of il Buco (for 1.5 years), a loved NYC restaurant and establishment that has been open for 13+ years.
il Buco works closely with a rare breed of pig found off the coast of Georgia's Ossabaw Island, the Ossabaw. This breed, left by the Spaniard's more than a century ago, has many of the characteristics of the "Jamon Iberico", or black-footed pig, so treasured in Spain for its flavorful meat. This free-range Ossabaw is raised in the open woods in North Carolina, fed a diet of acorns, supplemented with peanuts, both extremely high in oleic acid, the same fats that make olive oil so healthy to the Mediterranean diet.
