Tailor, a Unique Dining Concept with an Innovative Take On the Sweet and Savory, Opens September 1
New York, NY - August 31, 2007: The last stitch has been laid down - Tailor, a contemporary dining and cocktail parlor from Chef Sam Mason, opens its doors tomorrow, September 1 in SoHo. Named as an ode to the skills of a seasoned craftsman whose creativity, attention to detail and sense of excellence outweigh all, Tailor (525 Broome Street at Thompson and Sullivan, NYC) offers a menu comprising "Salty" and "Sweet" small plates and unconventional takes on classic cocktails that will challenge pre-conceived notions about what a dish, drink or ingredient should be, forever blurring the line between dinner and dessert, food and beverage.
“I envisioned Tailor as a place where the guests talk through the meal, not over it," says Mason. "I’d like to delight diners not only in the flavor of my dishes, but in the quirky and unusual ways they challenge the mind and palate. I know I may not be able to change the way everyone thinks about food - but that doesn’t mean I won’t try."
The Menu
The seasonally inspired and spontaneously revolving menu at Tailor allows guests to pick and choose from a selection of unique small plates meant for sharing, which Mason hopes will entice diners to experience unusual dishes or to create their own "bespoke" mix-and-match meal. A sampling of the Salty selections include Pork Belly accented with a delicate miso butterscotch and fresh artichoke; tender Foie Gras topped with peanut butter, cocoa and pear, and Mackerel with avocado-pistachio, watermelon and black olive.
Mason’s Sweet selections include smooth Caramel Panna Cotta with quirky corn sorbet and crunchy chocolate soil; Cedar Crème Bruleé with frozen tangerine and basil, and the exotic Tomato-peach with black sesame ice cream, lime and shiso. Mason also offers a chef’s tasting menu, which will transition over the course of seven plates from salty to sweet rather than dinner to dessert, as well an abridged specialty menu in the downstairs bar. Attention is even paid to the bar snacks, with offerings such as house-made Lemon-Scented Potato Chips and Huitalacoche Popcorn.
Craftsman Cocktails
An equally integral component of Tailor are the cocktails, offering unexpected twists on classic libations, created by veteran bartender Eben Freeman. Signature, hand-crafted beverages with ingredients that mirror the innovative, offbeat Tailor approach are served, along with a select wine list and "Tailor Made" spirits such as root beer rye, lemon balm rum and pumpernickel raisin scotch. Some of Eben’s creations: the Waylon, with bourbon, house-smoked cola and preserved lemon; the Violet Fizz, comprising gin, lemon, lime, cream, egg whites and crème de violette, and the unusual yet extraordinary Beet Sangria of brandy, triple sec, lime, orange, red wine and shocking red beet juice.
The Decor
Tailor’s décor is a perfect tribute to the building’s rich history, which dates back to the late 19th century when it began as the home of American Nut & Screw Building while never forgetting its downtown locale. With its charcoal, brown, and apricot color scheme, the space reflects turn-of-the-century accents with an edgy, modern twist, designed to highlight the underlying industrial construction while simultaneously evoking old clubroom charm. The room is filled with period and modern contrasting details, such as vintage wallpaper, crystal chandeliers, banquets upholstered with luxury fabrics and tobacco leather seats. The combination of materials, complete with wide wood plank floors, brick herringbone passageways, brass and copper fixtures manufactured by hand specifically for Tailor provides a warm and eccentric atmosphere.
Capturing the spirit of old-world New York with urban sensibilities, Tailor is fashioned to become a destination for modern merrymaking and culinary exploration. Every element of Tailor is touched by Mason and his dynamic partners’ creativity and spirit - always with a dash of humor, a little rock and roll and a whole lot of soul.
Tailor is open six nights a week, in the upstairs dining room from 6:00pm until 12:00am; Monday-Thursday; and Friday-Saturday until 1:00 am. In the downstairs bar room, hours are Sunday-Thursday from 5:00pm until 2:00am, and Friday-Saturday from 5:00pm until 3:00am.
