Planning on going to the South Beach Wine & Food Festival in February? From experience I can say the prime hotels will sell-out early. If you want to see chefs poolside, I'd recommend booking a room at the Loews or Raleigh. If you want to stay in the newest spot, the Gansevoort South (sister hotel to the Gansevoort in the Meatpacking in Manhattan) will open in January. Opening today is Primehouse, a Chitown steakhouse import courtesy of Steve Hanson and B.R. Guest. When I stopped by friends and family this weekend, the Himalayan rock salt-tiles had not yet been fully installed in the meat aging room. They look like small salmon-pink marble bricks. An interesting concept I think and I'll be curious to see what affect they actually have on the steaks. Complete unedited press release after the jump.

How much notice do you need to work an event into your schedule? I'd guess about 10 days. On September 20th is the fourth annual pig festival at il Buco. There will be a whole Ossobaw pig roasting on Bond Street.
What's an Ossobaw pig you ask? They are a special breed descendant from the famous Iberian pigs in Spain found on Ossobaw Island, Georgia. Their story is well chronicled with humor and gusto in the book Pig Perfect by Peter Kamisky. How long does it take to work a book into your reading list? Prose (done right) can often be the perfect appetizer.

Back in 2005, when chef Dean Fearing announced he was the leaving the Mansion on Turtle Creek in Dallas, it was a big surprise. He'd been there for 21 years. The deal he could not refuse was with Ritz-Carlton. The new hotel (the first new RC to open in the US in the past four years) and Fearing's Restaurant open tomorrow. TVFN announces a new Iron Chef will be chosen in The Next Iron Chef competition. The six-part series premiering in October features eight chefs battling each other (not the existing Iron Chefs) to become the fifth Iron Chef. Personally, I'm rooting for Aaron Sanchez to become the first Iron Chef Mexican.
