What your opinion on doing this in a slow cooker?

I think a slow cooker would work just fine. Perhaps try it at the lowest temperature setting and see how it works.

Hello,Again , Try wrapping the pork in banana leaves(frozen Goya brand are my favorite)for a little more authenticity. I learned to make it while on Kauai with some chefs from Roy's. Remember the Linghams Chili sauce!
